Monster Cookies

The first time I ever had a Monster Cookie was in San Diego, from Corner Bakery Cafe.  I made Monster Cookies once before, and they were full of yummy ingredients, but I recently tried another recipes, and they really turned out monstrous!

They were huge (and flourless!), and I only wish I added more M&M's and chocolate chips!



Monster Cookies

Ingredients:
  • 1 c sugar
  • 1 c packed brown sugar
  • 1/2 c butter, softened
  • 3 large eggs
  • 1 1/2 c smooth peanut butter
  • 1 T vanilla extract
  • 2 t baking soda
  • 1/2 t salt
  • 4 1/2 c Old Fashioned oats
  • 1 c M&M's
  • 1 c chocolate chips

Directions:
  • Pre-heat the oven to 350°F.
  • In a large bowl, cream the sugars and butter together until light and fluffy.  
  • Beat in the eggs, peanut butter, vanilla, baking soda and salt until well combined.
  • Stir in oats.
  • Stir in M&M's and chocolate chips.
  • Scoop 2-to 3-tablespoon mounds of the dough onto parchment-lined baking sheets. 
  • Bake for 12-15 minutes and allow to cool for 5 minutes on the baking sheets before transferring them to a rack to cool completely.
