I've made overnight oats once before, many, many years ago, but I'm not a fan. I'll eat oatmeal, but if I eat breakfast, I want savory - bacon, eggs, hash browns...
I decided to give it a go again, and also have my kids try them (they're not a fan of oatmeal, period. Unless it's in cookies...).
I just took 1/2 cup of old fashioned oatmeal + 1/2 cup of coconut milk, mixed them in a bowl and let it sit overnight.
Our toppings included berries, hemp seed, chocolate chips, and pb.
I'm still not a fan, but one of my kids enjoyed it.
I definitely want to try a savory version next time!
