I never heard of Cowboy Cookies before, but when I was searching online for cookies to make, I found several recipes for them, so I decided to try.
The cookies are full of chocolate chips, oats, coconut, and nuts. They are very hearty!
Cowboy Cookies
Ingredients:- 1 c butter, softened
- 3/4 c brown sugar
- 1/2 c sugar
- 3 large eggs
- 2 t vanilla extract
- 2 3/4 c flour
- 1 t baking powder
- 1 t baking soda
- 1/2 t salt
- 2 c chocolate chips
- 1 c old-fashioned oats
- 3/4 c chopped walnuts
- 3/4 c shredded coconut
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, mix together the butter and sugars until creamy.
- Mix in the eggs and vanilla extract.
- Stir in the flour, baking powder, and baking soda.
- Stir in oats.
- Mix in chocolate chips, Add in all purpose flour, baking powder, baking soda, and salt. Mix until just combined. Add in the quick oats and mix until just combined.
- Fold in the chocolate chips, walnuts, and shredded coconut.
- Scoop dough by heaping tablespoons onto a parchment-lined baking sheets and bake for approximately 10-12 minutes.
