Cowboy Cookies

I never heard of Cowboy Cookies before, but when I was searching online for cookies to make, I found several recipes for them, so I decided to try.  

The cookies are full of chocolate chips, oats, coconut, and nuts.  They are very hearty!


Cowboy Cookies

Ingredients:
  • 1 c  butter, softened
  • 3/4 c brown sugar
  • 1/2 c sugar
  • 3 large eggs
  • 2 t vanilla extract
  • 2 3/4 c flour
  • 1 t baking powder
  • 1 t baking soda
  • 1/2 t salt
  • 2 c chocolate chips
  • 1 c old-fashioned oats
  • 3/4 c chopped walnuts
  • 3/4 c shredded coconut
Directions:
  • Preheat oven to 350 degrees Fahrenheit. 
  • In a large bowl, mix together the butter and sugars until creamy.
  • Mix in the eggs and vanilla extract.
  • Stir in the flour, baking powder, and baking soda.
  • Stir in oats.
  • Mix in chocolate chips, Add in all purpose flour, baking powder, baking soda, and salt. Mix until just combined. Add in the quick oats and mix until just combined.
  • Fold in the chocolate chips, walnuts, and shredded coconut.  
  • Scoop dough by heaping tablespoons onto a parchment-lined baking sheets and bake for approximately 10-12 minutes.
