I'm finally starting to tackle the ever-growing pile of recipes torn out from magazines. A recent recipe I tried was from a Good Housekeeping magazine - Vegetarian Chili Mac.
It was super simple, pretty much using only pantry staples!
I simply heated up 1 T vegetable oil in a pot, and cooked 1 medium onion, chopped, along with 2 T chili powder and 1/2 t salt for 8 minutes on medium heat, stirring often so the onions don't burn.
I added 1 28 oz can of crushed tomatoes and 1 15 oz can of rinsed and drained black beans. I heated until the mixture simmered, simmered for 5 minutes, and tossed in 1 lb of macaroni, cooked.
I topped with some shredded cheddar cheese and chopped parsley.
An easy weeknight meal!
