I love Baked Potatoes, but I think I love Baked Potato Skins even more.
Maybe it's because there is less potato and more room for bacon, cheese, sour cream, and other toppings.I simply took several cleaned potatoes, rubbed them in oil and sprinkled with salt and pepper, and baked for an hour and 425 degrees Fahrenheit.
After letting them cool, I sliced each potato in half, and scooped out the insides (save it to make Corned Beef Hash). I then brushed the insides and outsides with oil, sprinkled with more salt and pepper, and broiled for 5 minutes on each side.
I then added cheese and bacon into each potato skin, and broiled for 2-3 more minutes.
Once done, I added more cheese, sour cream, and green onions.
We once made these for a Super Bowl party, and they were a hit!
