Baked Potato Skins

 I love Baked Potatoes, but I think I love Baked Potato Skins even more.    

Maybe it's because there is less potato and more room for bacon, cheese, sour cream, and other toppings.

I simply took several cleaned potatoes, rubbed them in oil and sprinkled with salt and pepper, and baked for an hour and 425 degrees Fahrenheit.

After letting them cool, I sliced each potato in half, and scooped out the insides (save it to make Corned Beef Hash).  I then brushed the insides and outsides with oil, sprinkled with more salt and pepper, and broiled for 5 minutes on each side.

I then added cheese and bacon into each potato skin, and broiled for 2-3 more minutes.

Once done, I added more cheese, sour cream, and green onions.  

We once made these for a Super Bowl party, and they were a hit!
