I bought a huge bag of assorted miniatures candy, and ROLOs were being left behind. So, I decided to make ROLO-filled cookies!
Preparing them was messy (the dough was sticky), but the end result was a chocolaty cookie with a creamy, caramel center. Yum!
ROLO-Filled Cookies
Ingredients:
- 1 cup butter, softened
- 1/2 c sugar
- 1 c brown sugar, packed
- 2 large eggs
- 1 T vanilla
- 2 c flour
- 1 c cocoa, sifted
- 1 t baking soda
- 3/4 t kosher salt
- 35 ROLOs
- Preheat oven to 350 degrees F.
- In a large bowl, beat butter and sugars until creamy.
- Mix in eggs and vanilla.
- In a separate medium bowl, combine the flour, cocoa powder, baking soda, and salt.
- Stir dry ingredients into the wet ingredients.
- Scoop approximately 2 T dough, and insert an unwrapped ROLO into the center, making sure dough completely covers the ROLO.
- Place dough onto a parchment-lined baking sheet and bake for 9-10 minutes.
- Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool.
