Four Seasons Resort Hualalai is one of my favorite resorts in the state. It's just a spectacular property, and the service is stellar. It's been years since I last stepped foot on property, so I was excited when I got to visit some colleagues and have dinner at `Ulu Ocean Grill - one of the restaurants at the resort.
The view from `Ulu is just amazing, and there is plenty of outdoor seating.

Roasted Kekela Beet Salad |
This beet salad was delightful, and I loved the accompanying roasted chili cashews.

Ali`i Mushroom "Loco Moco" |
This vegetarian twist on a traditional loco moco was served chilled. A tomato egg yolk with hearts of palm sat atop a tower of cauliflower rice and mushrooms in a black pepper emulsion.

Crispy Calamari |
The Crispy Calamari was the best calamari dish I ever had. The calamari is cooked sous vide, which made the calamari so tender.

Shave Ice |
The Shave Ice dessert was light and refreshing. Consisting of a coconut sorbet atop a pineapple granite, with li hing mui pineapple, strawberry pearls, and lilikoi meringue. The tropical flavors were perfect for the setting!

Mango Lime Tart |
I'm not a huge fan of citrusy, tart desserts, but the Mango Lime Tart was amazing! It had just the right amount of sweetness and tartness, and I loved the layers of mango flavor that came through in the mango lime custard, mango jellies, and compressed mango cubes.
Dinner was fantastic, and our server, Bronson, was exceptional.
