I love all things salted caramel, so I decided to make some Salted Caramel-Stuffed Chocolate cookies using Kauai Sweet Shoppe's Hawaiian Sea Salt Caramels and Malama Mushroom's Lion's Mane Cacao Mix.
Salted Caramel-Stuffed Chocolate Cookies
Ingredients:
- 1 c unsalted butter, softened
- 1 c dark brown sugar
- 1/2 c granulated sugar
- 1/2 c Malama Mushroom's Lion's Mane Cacao Mix
- 2 large eggs
- 1 t vanilla extract
- 3/4 t baking soda
- 1/2 t salt
- 2 1/2 c all-purpose flour
- 2 c semisweet chocolate chips
- 24 Kauai Sweet Shoppe Hawaiian Sea Salt Caramels
- Preheat oven to 350° Fahrenheit.
- In a medium bowl, mix butter and sugars until smooth.
- Mix in Lion's Mane Cacao Mix until well combined.
- Mix in eggs and vanilla until smooth.
- In a separate small bowl, combine flour, baking soda, and salt.
- Mix flour mixture into sugar mixture.
- Fold in chocolate chips. Be careful not to overmix.
- Using a medium scoop (approximately 2 T), scoop dough into balls.
- Place an unwrapped caramel into the center of each ball, ensuring that the caramel is covered completely.
- Place balls of dough onto a parchment-lined cookie sheet, at least 2 inches apart.
- Bake for 13-15 minutes in a preheated oven.
- Let cool on baking sheet for 5 minutes before transferring to a wire rack.
Yield: 24 cookies
