One of the most memorable dining experiences I've ever had took place at elements in Princeton, New Jersey. Our Na`au team was treated to a Chef's Tasting of the most thoughtful, expertly-crafted dishes I've had in a long time.

Everything about the dinner - the food, the service, the presentations - were exceptional. We tried many ingredients we've never heard about before, experienced different preparations than what we're used to, and we really appreciated how the menu showcased a "sense of place," featuring many ingredients native to New Jersey, as well as items caught, harvest, or foraged by the team themselves.
My favorite dishes were many! They included the Chicken of the Woods (the most stunning presentation, and the mushroom itself was just so creamy), the Kona Kanpachi (deboned and marinated in smoked buttermilk; the preparation and spices made the fish unlike any other I've tried before), the Caviar (this was Chef Brian's fave), Foie Gras (the pawpaw bread was irresistible), and the New Jersey Scallop (perfectly cooked!).
The dessert was phenomenal as well. The Tahitian Vanilla Ice Cream was served with the best Sweet Biscuit I've ever tasted. I would've been elated with just the biscuit, but combined with the ice cream, pawpaw caramel, and figs - this understated dessert is one of the best I've had in a long time.

You must visit elements if you find yourself in Princeton. It's truly one of the best dinners we've all experienced in a really long time.
