The Fireworks show takes place every Saturday year-round, with some exceptions (check the website to confirm dates / times), and of course - it is dependent on weather.
There were lots of people along the bridge and wharf watching the fireworks, but it was not overly crammed with people.
There are several optimum viewing spots for the Fireworks along Cockle Bay Wharf, and many eateries along the Wharf from which you can dine and watch the fireworks.
We walked from our hotel to watch the fireworks from the Pyrmont Bridge. We got there at 8pm (show started promptly at 830pm) and there were a few empty benches, but they were far away from the bridge railing. If you want to sit and watch the fireworks, you'll still get a nice view, but I wanted to watch closer to the water to catch shots with the reflection of the fireworks and the lights of the buildings.

The Fireworks Show was only about 7 minutes long. I'm not sure if it's longer during other times of the year, but even at just 7 minutes, I thought it was a great show, and I was eager to get back to the comfort of our hotel since it was quite chilly out.
