Visit Hilo: Soup`R Saimin

There are not many places in Hilo that are open late, and if they are, you most likely need reservations.  But thankfully, after arriving upon a delayed flight, the Soup`R Saimin food truck was open (they open til 10pm).

They have a small menu consisting primarily of saimin and Vietnamese dishes.

Summer Rolls

Saimin
Garnishes

The Saimin was served with the broth separate, and all of the garnishes and noodles in another container.  The garnishes included a fried egg with furikake, fish cake, char siu, kamaboko, won tons, lettuce, and hoisin.

It was so comforting and hit the spot.  I didn't use the lettuce, but I loved the won tons.  Even though they were fried, I really enjoyed them.  If they sold it separately, I would buy a pack of them.  The pork inside the won tons was flavorful, and the pi was cooked perfectly (not overcooked and tough like some other places).
Crispy Pork Bahn Mi

My friend really enjoyed the flavor of the pork in the Bahn Mi.

Soup `R Saimin was a great option for a late-night meal.

Check them out on Instagram.
